  El Rey Apamate Dark 73.5%



8 ounces milk

10 ounces El Rey Apamate Dark 73.5% Chocolate

6 ounces heavy cream

2 ounces sugar

1 ounce butter




Bring milk to a boil. Make a "ganache" by


pouring milk over chopped chocolate. Stir gently to combine.

Bring cream, sugar and butter to a boil and then add the "ganache" to this mixture, stirring to combine.

Continue to cook sauce for a minute to thicken. Remove from heat and set aside.

This sauce can be stored in the refrigerator or freezer and re-heated as needed.
